Almost a week finished :) Think I may celebrate the great week we had with a glass of wine. Maybe I'll start now :)
Another great day. Hubby is really enjoying the food and thinks he is sleeping better; may be because his tea habit has dropped drastically due to the no refined sugar rule. My breakfast this morning was a banana muffin with butter, apple with almond butter, and a glass of whole milk. I had errands to run today and an appointment set for lunchtime so I knew lunch would be later so I planned for it and took a Lara Bar with me to help tide me over. The Lara Bar was excellent. They are all natural with minimal ingredients, I have tried a couple of different flavors and have not overly liked them, but the cashew one is great. Hubby loves them all so far. We had to stop at the grocery store today so he could get more :) Lunch was leftover quesadillas with salsa, mmmm mmmm. Finally, dinner was baked cod and onions with a mango salsa, peas and baked "sweet" potatoes. I had sweet potatoes on the meal plan for today. I bought sweet potatoes on grocery day, or so I thought. They looked like sweet potatoes but when we cut into them they were white. They did have a slight sweet potato taste and texture but were definitely not the sweet potatoes I am used to. Anyone have any ideas what I ended up buying? This is what they looked like and you can see above that they were white when we cut them open. Anyways, whatever they were dinner was still pretty good. I will admit I am not a big fish person but I do try to include it in my meal planning because I know how good it is for you and Hubby loves it. This cod fish was actually fish we had caught ourselves over the summer and had frozen. Even though it is not my favorite meal and I wasn't looking forward to it, it was still pretty good and the salsa was a very nice addition. Those were white sweet potatoes. My farmer grows them and we got many of them in our fall CSA baskets. Love seeing all your healthy recipes and choices. Way to go.

Thanks Kathy. I did Google them but thought white sweet potatoes had white skin? These still had the reddish skin. They were nice though :)
