Makes 2 dozen fish cakes
Ingredients:
3 lbs potatoes; peeled, washed and cubed
2 lbs cod fish, skinless and boneless
2 onions, diced
Sea salt & pepper to taste
Savory
1/4 cup butter
Butter for frying
Directions:
Preheat oven 400 degrees C.
Boil potatoes in a large pot of water until cooked, about 20 minutes.
Meanwhile, place onions and cod fish in oven-safe dish. Season with salt, pepper and savory. Bake about 30 minutes until fish is cooked through and onions are softened.
When potatoes are finished cooking; drain off all water, add butter and mash. Season with salt and pepper and about 1 tbsp of savory. Mix together. Taste potatoes to check seasoning and add more if needed.
When fish and onions are cooked, remove from oven. Remove fish and onions from baking dish onto a large plate (we don't want all the cooking liquid). Flake fish with a fork, add flaked fish and onions to potato mixture. Mix together. You can now eat like this as a mashed potato with fish (or as we call them here: fish cakes without the cake). Or you can form them into about 2 dozen cakes and fry them in butter, about 6 at a time. Fry until browned, flip and fry other side until browned.
