I have been making this recipe for years and we love it. Very simple but good. The only changes I made was I would normally cook my pasta in oxo, but not now due to the real food challenge, but feel free to boil pasta in homemade chicken or vegetable stock for more flavor. I also normally use large frozen shrimp but I couldn't find any that only contained natural ingredients therefore I bought smaller, cooked ones; they were not as good. I will keep looking.
Serves 4
Ingredients:
8 oz dry whole wheat pasta (I use spaghettini)
Water for boiling (with sea salt if desired)
1 lb cleaned and deveined shrimp
2 tbsp olive oil, divided
2-4 cloves fresh garlic, minced
1/2 tsp red pepper flakes (more or less for desired spiciness)
1 bunch broccoli florets
Sea salt & pepper
Directions:
Bring large pot of water to boil, salt if desired. Cook pasta according to package directions.
Toss shrimp with 1 tbsp olive oil, garlic cloves and red pepper flakes. Let marinate while water is boiling for pasta.
Add broccoli florets to boiling pasta for the last 2-3 minutes of cooking time, cover.
Add remaining 1 tbsp olive oil to large saute pan, add shrimp and saute over med-high heat until shrimp are pink and no longer transparent, only a couple of minutes, turning half way through. Remove from heat.
Strain pasta and broccoli and add to the shrimp in pan. Toss together, season with salt and pepper and serve.
