Tried yet another new and very good vegan recipe :) Tonight we had Tex Mex Casserole. Of course, I made some tweaks and also made a mistake but it still turned out good. I added the entire 14 oz can of tomato sauce instead of the 1 cup, Oops. I didn't bake in the oven as the recipe said (why mess up an extra dish to wash?) so it wasn't really a casserole I guess :) The taste and spice was really good. Hubby thinks it would be great as a taco filling. I had mine with blue corn chips and avocado and it was great. The only thing I wasn't overly fond of was the kale. It just seemed like it didn't belong in this dish. Next time I will cut it much smaller or may just use spinach instead.
