Breakfast this morning was a slice of whole grain bread (Stonemill, sprouted 3 grain, from Dominion) with almond butter, some strawberries, and my decaf coffee (with milk).
A great start to the week; both food-wise and weather-wise :) Breakfast this morning was a slice of whole grain bread (Stonemill, sprouted 3 grain, from Dominion) with almond butter, some strawberries, and my decaf coffee (with milk). Lunch was the leftover grilled chicken breast from last night's dinner with homemade BBQ Sauce and the last of the homemade Coleslaw. Also had a piece of Chocolate Mud Cake for dessert :) For a snack today I made a smoothie. Didn't really measure anything, just tossed it all in the blender and added for consistency. I used strawberries, frozen raspberries, milk, greek yogurt and a little honey. It was really nice :) Dinner tonight was an old favorite. Roasted Chicken and Roasted Veggies. For the chickens I simply stuffed them with some lemon and onion pieces, sprinkled with salt, pepper and savory; and drizzled with lemon olive oil. For the veggies I used carrot, turnip and potato; tossed with olive oil, salt, pepper and savory. Roasted everything in the oven on about 425-450 F for about an hour. It was delicious. Now have leftover chicken to use in a new recipe tomorrow and will also make some chicken stock :)
