A good day overall. Real food meals and snacks. Breakfast was toast and tea. Lunch was leftover pasta and sauce from yesterday with some leftover chicken. Snack was a tea and a Snowball. Dinner tonight was Stuffed Peppers with avocado. This stuffed pepper recipe makes a lot of filling. I always freeze the leftover filling to use another day in wraps.

I will admit I cheated a little today on my real food challenge. I ate some Lindor chocolates that I got for Christmas. They have been calling my name the last 2 weeks and I have resisted, but today I got weak and gave in. There were 6 in the box and I ate them all :( Well they are gone now so no more whispering my name.
All meals were good today. Granola for breakfast. Leftover Beef & Broccoli from last night for lunch today. Dinner tonight was a simple pasta and marinara sauce. I had some frozen turkey meatballs that I threw in and topped with Parmesan. Two weeks completed and was a little upset this morning to not see a weight loss after my second week. I gained a minuscule amount of 0.2 of a pound, but even though small, it is in the wrong direction. I am trying to not let it get to me as I did do well last week with my food choices and I know weight is not everything. Breakfast this morning was my old reliable; granola with banana and whole milk. I also had a tea with maple syrup and cream :) Snack today was some apple slices with my preschoolers. Lunch was leftover Caesar Salad from last night and leftover Pizza from the night before. The Pizza wasn't nearly as good after being left for two days. Dinner tonight was Beef & Broccoli Orange Stir-fry with quinoa. This is a really nice recipe. A great day and a great weekend overall.
Breakfast today was a couple of cups of tea with maple syrup and cream (finally found good coffee cream at the grocery store this week). Lunch was a late cooked breakfast. Hubby made hash-brown potatoes with peppers and onions, fried eggs, and homemade bacon. For the bacon we buy sliced pork belly and marinate it overnight in water, salt and maple syrup. Fry it up. It's delicious. Snack today was an apple with almond butter, a handful of almonds and a couple of dried figs. Dinner tonight was Roasted Chicken )store-bought) and a Caesar Salad. The salad is from the 100 Days Cookbook. It's great and pretty simple. We added some of the homemade bacon from this morning to it as well; yummy :) Did our meal plan for this weekend and the coming week. Decided on Pizza tonight and chicken and salad for tomorrow night. I have work to do tomorrow and we have plans tomorrow night therefore a more simple meal was needed. We bought a roasted chicken today from the grocery store and I will make a homemade Caesar Salad from the 100 Days cookbook. Quick and easy :) The pizza we made tonight was the whole wheat crust from the link above. This is the only recipe we now use for pizza dough. I do make 2 pizza crusts from this recipe though; I like thinner crust. For toppings we used tomato sauce, Italian spices, tomato, green pepper, sun-dried tomato. prosciutto, mozzarella, pineapple, Parmesan, & fresh basil. Delicious :)

Snack today was a couple of Snowballs; I made a new batch and had to taste test them :) I also had some grapes as a second snack. I also did my yoga today and will start a new video next day :) Dinner tonight was only planned last night. We usually decide our weekend meals close to the weekend. Tonight we decided to do pan-seared pork chops. I marinated them in olive oil, balsamic vinegar and smoky tea-aki spice for most of the day. We also cleaned out the refrigerator and had the last of the asparagus and spinach along with garlic mashed potatoes. It was delicious meal and even better because it was cooked by Hubby :) Also had a bear with dinner; it's Friday after all :) Last night's snack was some plain potato chips and a beer. I have found Boulder Canyon Olive Oil chips which only have 3 ingredients: potatoes, olive oil and salt. They are delicious. Another great day :) Breakfast this morning was Granola with whole milk (still out of bananas) and a tea with whole milk and maple syrup. Morning snack was a slice of whole grain bread with almond butter and Strawberry Jam. Lunch was leftover Fish Cakes from last night's dinner. Yummy :) I also had a Snowball, mmmm mmmm. I forgot to mention I did do my yoga workout yesterday and I did it again today as well. Still doing the one for complete beginners. Think I'll do it again tomorrow, that will be a week's worth and then I'll start another new video :) Dinner tonight was Chicken Fried Rice. This is a recipe I have been making for years and it is quick and easy. I find people often question just having this for dinner. I am often asked what I have with it. My response: nothing. I don't have anything with it. It is a complete meal. It has chicken and eggs for protein. It has green peas and onions for veggies, and it has brown rice for carbs. Snack last night was a Mint Chocolate Chip tea with milk and maple syrup and I also had an iced tea I made myself with honey for sweetness. Thinking tonight may be a glass of wine for my snack :) My work week now finishes on Thursdays so it's the start of the weekend for me :) Yay!
I have a lot of people tell me they just do not have the time or energy to plan and cook their meals from scratch everyday. I understand it does take extra time and effort. I am not saying it's simple but it is doable and it gets easier over time as you develop new habits and routines.
Start off small. Just do 1 new thing a week or only plan to cook 1 or 2 meals a week using real foods. The 100 days website offers up 10 day pledges where you choose one thing to do for 10 days. This can help you develop some great new habits and you can decide which ones work best for you and your family and which ones you want to keep. Some other helpful hints are: Plan to try 1 new real food recipe a week (it can even be on the weekend). Plan more meals using a crock-pot so dinner is cooked when you get home from work. Make large meals that freeze well so you can have freezer meals available; Lasagna and Chili are great for this. Prep recipe ingredients the night before when possible. Choose simple recipe and meals to start. Have other family members help with meal prep and/or cooking. Day 10 and still doing well :) Breakfast this morning was the usual; granola with whole milk (no banana today, all out) along with a tea with maple syrup and whole milk. Lunch was half a Quesadilla from last night's dinner along with avocado and salsa. Very tasty. Snack today was one Snowball. I admit I have a sweet tooth and still find myself craving something at times. Dinner tonight was a family favorite; Fish Cakes. We should have had a side vegetable with this meal but I didn't think of it until I was taking the picture. They are great as is but I don't think I eat enough veggies. Snack last night ended up being a simple cup of Nettle Greek Tea. I ended up with a stomachache last night so I drank that tea to help with it and figured eating something else wouldn't be a great idea. Not sure what caused the pain, perhaps eating too fast at dinner or perhaps too much wheat the last few days; not sure. The tea helped though and it helps me sleep as well :)
Another excellent day :) Breakfast this morning was Granola with a sliced banana and whole milk. I also had a Chai tea with whole milk and maple syrup. Lunch was leftover Veggie Fajitas from last night's dinner. Only had the 1 fajitas for lunch (not 2 like for dinner) but it was still great :) I also had 1 snowball for dessert :) No snacks today...yet. Will likely have a snack tonight I imagine. Usually a Mint Chocolate Chip tea. I also did my yoga workout today. I admit it's getting easier and I didn't hurt today after doing it yesterday; so that's good. Dinner tonight was Veggie Quesadillas. I didn't really follow this recipe as I used the leftover Fajitas veggies from last night. I simply added a half cup of corn to the veggies and topped with cheddar cheese. I also used the same tortillas I made last night. These are a favorite of mine. I had them with avocado and salsa. Snack last night was a tea and some plain chips. I found a Boulder Canyon Brand that have only potatoes, salt and olive oil :) Yay! |
