Had a delicious weekend. Tried Bison steaks last night on the grill. They were good but not good enough for the price. Also had grilled veggies, grilled pineapple & corn on the cob. Tonight we had Bison burgers; soooooo yummy. I don't bother with the bun; trying to eliminate wheat and find it too filling anyways. I had avocado, tomato, spinach, cheese & homemade fries with it. Delicious. Also had some great breakfast meals over the weekend. Had eggs and bacon one morning and had sausage, eggs and fried potato this morning.

It's Friday and a nice evening! We grilled for dinner. Grilled pork chops marinated in olive oil, balsamic vinegar and Smoky Tea-aki from Steeped Tea. Along with grilled corn and grilled pineapple, this was a great meal.
Day 3 of no wheat and very little grain; and all is going well.
Tried a new recipe tonight for dinner. Tried out a Jamie Oliver chicken recipe: Roasted Chicken Breast with Pancetta Leeks and Thyme. It was pretty good but of course I made a few changes for personal preference and ingredients I happened to have. I used prosciutto instead of pancetta and I used onions instead of leeks (I am not a leek fan). I also used dried thyme instead of fresh. So I guess we really had Roasted Chicken with Prosciutto Onions and Thyme :) We had baked sweet potatoes with butter and garlic salt as a side. Another great day; 100% wheat free and almost 100% grain-free as well :)
Had a yummy dinner of Honey Mustard Salmon with steamed (purple) carrots and broccoli. This is a slow cooked salmon and is a recipe from Chef Michael Smith. It's pretty nice and that's a good compliment coming from someone who is not a lover of salmon (I try to eat it because it is so good for you and I don't eat enough healthy fish; and Hubby loves it). Dinner was even better since Hubby did the cooking tonight :) I am becoming more convinced that wheat, and maybe grains, are a problem for me. When I eat lots of wheat based foods I tend to feel really bad. I get really fatigued, my joints ache severally, and I get a really bad stomach. These symptoms among several others seem to diminish when I eliminate wheat and/or grains; so I'm back at giving it another try. I am again attempting to eliminate all wheat and gluten while limiting all other grains. Today went really well. No wheat at all and only some oats in my morning Granola, which I made myself. Lunch was leftover Chili. Dinner tonight was Stuffed Peppers. These are great and 100% grain-free :) I used extra spinach and added some grated Parmesan on top after cooking; yummy.
The best thing after having roasted chickens for dinner is getting to have Chicken Stew the next day :) Yum yum. This is one of my favorite comfort foods :) So simple and so yummy; and using real ingredients it is healthy (without being loaded with salt and additives like the canned varieties).
If you have been looking at my blog lately you can see that we have been getting off track lately. Not cooking nearly as often as we have been over the past year. We have been eating out a lot and I haven't been staying gluten-free or even following my real food guidelines as much as we should be. I can really notice it in my health, general overall wellness and my waist-line :(
We did really well today though and hoping it will continue 75-80% of the time. I made a large batch of Granola last night to have for breakfasts :) Dinner tonight was roasted chicken and roasted veggies. This smelled delicious while cooking and I found myself really looking forward to this meal :) It was excellent; healthy, real food ingredients, and so simple. A few of us decided to try The UnderBelly (basement of The YellowBelly) for drinks and food last night. I admit I was a little skeptical as I have tried The YellowBelly on a couple of different occasions (ages ago) and found the food to be only ok but the service to be pretty bad. Bad enough that we stopped going all together. Well a friend suggested trying The UnderBelly as he found it great for drinks recently.
I checked recent reviews and the menu and we decided to give it a go and I'm so glad we did :) The food, beer and service was great. There were 5 of us and we ended up sitting at the bar as we didn't realize reservations would be needed and they were pretty busy for a Sunday evening. I tried the Wexford Wheat beer which was a great tasting lighter beer. I had the Sausage & Provolone Arancini as an app. These come in 3 or 6 and they are delicious. Other apps in our group was the Calamari and the Tacos. All received great reviews :) For mains, I had the Short Rib Poutine (on recommendation of the staff) which was wonderful. Delicious gravy :) It was pretty large too so keep that in mind. I ordered it as a main and I still didn't finish it all. Others ordered Margarita Pizza, YellowBelly Burger, Mussels with tomato and sausage, and Fin and Feather Tacos. All the food was fabulous and the staff were great. Sorry, I didn't get pictures of everything. Also want to say thanks to the lovely couple who actually moved for us so we could all sit together at the bar :) You guys were great and added to the fun of the evening :) There's a new cafe open in St. John's. The Newfoundland Chocolate Company has a cafe opened on Signal Hill :) They have great sandwiches, coffee, chocolate.....and gelato, Yay! They are having their grand opening today and I suggest everyone get out there and give it a try soon :) We got to try the Cheddar and Apple Panini and the Cocoa Pulled Pork Panini, seems there were free samples this morning, and we also bought the Chocolate Glazed Ham which was delicious, if you like pickles. It also came with dill pickle chips :) If I had to choose a favorite from those three it would probably be the Pulled Pork but they were all great. We finished off with some great gelato; I had the white chocolate and Hubby had the pistachio (as always). Definitely a place we will revisit. Great food and spectacular views :)
Myself and my Sister took Mom out for dinner last night at Bacalao for Mother's Day. I have eaten here once before and it was good. For appetizers they have a wonderful Jigg's Dinner Cabbage Roll; this is delicious :) I would recommend this fully. We also ordered Calamari but they were not my favorite. For mains I had the Oktoberfest Inspired Pork which was fantastic but way too much food; I ended up taking half of it home. Not a bad complaint; and keep in mind I was also saving room for dessert :) My Sis and Mom had specials, one was Halibut and the other was Lobster with other seafood. For dessert we split two specials; a latte cheesecake and three types of bark. I will admit the desserts were not a hit for us. They sounded delicious but didn't live up to our expectations.
