Made a great Beef & Broccoli stir-fry for dinner tonight. I really enjoy this recipe. It's pretty simple, has all real food ingredients, and has a great orange flavor :) I didn't use the flour since I'm trying to stay gluten-free, and it didn't seem like it needed it anyways. I also serve this with quinoa but it would be great with brown rice as well.

IT'S FRIDAY!!!!!! Even better since we made nachos for supper :) Made are own corn chips from corn tortillas. Topped with ground chicken cooked with homemade taco seasoning and onions. Layered chips, meat, diced tomato and diced bell pepper, and Five Brothers cheddar; repeat and then topped with Five Brother's Smoked Cheddar; baked until hot and melted. Topped with green onion at the end. Served them with avocado and salsa. They were delicious :)
It was our turn to host dinner club this month. We knew we were going to do Jambalaya as the main but didn't decide on apps and dessert until the day before :) I made a nice iced fruit tea with berries for anyone not wanting beer, wine or cider :) We started with a pre-app of tomatoes and cheeses, included Smoked Cheddar from 5 Brother's. We ended up making Coconut Shrimp with Sriracha dipping sauce (the sauce was store-bought but found one, "A Taste of Thai", with no added questionable ingredients; only sugar). The main was Creole Jambalaya with chicken, shrimp and sausage. The sausage was the local Chorizo from Rocket Bakery. This sausage is really spicy but great in Jambalaya :) Dessert was a recipe I haven't made in years. I made a Chocolate Mousse with berry topping. This mousse is easy and tasty and is made with tofu but you wouldn't know it :) I used an organic tofu with minimal ingredients. I used coconut sugar instead of regular or superfine sugar, Baileys instead of Brandy or water :) and we topped with berry sauce and additional Baileys instead of whipped cream. Overall it was a pretty good meal :)
Decided to have a Rupert's Smokehouse Club sandwich for lunch today. It was delicious as always. He uses local ingredients when possible and he smokes all his meats. We also had a piece of Strawberry Cheesecake; another piece of heaven :) Sorry, no pic of cake, had it almost finished when I thought of it :) If you haven't tried Rupert's yet I suggest you try it soon. They have wonderful sandwiches and cheesecakes. Keep in mind they often sell out so get there early :)
