Breakfast this morning was scrambled eggs with nutritional yeast and fresh mini tomatoes from Lester's farm. These were delicious. Nothing better than fresh tomatoes. Also had an organic coffee with maple syrup and whole milk. Lunch was a bowl of my Chicken Soup (from the freezer). Dinner tonight was a Beef & Veggie Stir-fry. Hubby wanted the beef cooked separate so it wasn't overcooked. He pan-fried it and we just sliced it and added it to the top. I followed the recipe pretty much as written except I used a strip-loin steak and served with basmati rice.
I think I had a pretty good day considering it's Halloween and we had a party in pre-k :) All my meals were good choices and I didn't go nuts with the Halloween treats. I will admit I really enjoy my weekends. Lots of relaxation, usually, and very little cooking on my end. Hubby tends to cook and/or we eat out :) Had some delicious meals this weekend although not all were the healthiest options, but by no means were they the worst options. Trying to find a balance and I'm still working on it.
Hubby cooked a great breakfast yesterday morning. Ate at my favorite sandwich place as well yesterday; had a sandwich and cheesecake all to myself this time :) Had Piatto pizza tonight but tried their gluten-friendly crust which was pretty good. Although I didn't post yesterday it doesn't mean I fell off the wagon; although usually it would :) Made a favorite recipe of ours last night; Stuffed Peppers. This is a great meal by itself and even better because it makes extra stuffed pepper mix to freeze and use another day, and I also cook a full pound of ground chicken to split up to use half for the pepper mix and the other to make homemade Nachos :) Win, win. I don't have a recipe for the nachos. I just layer corn chips, cooked ground chicken with taco seasoning and onion (leftover from meat cooked for stuffed peppers last night), tomato, bell pepper, and cheese. I do make my own taco seasoning though. These are delicious. I usually make my own corn chips as well but haven't been able to find the organic corn tortillas lately. I bought organic corn chips instead with limited ingredients. Serve the Nachos with avocado and salsa, very yummy :) The Nachos don't look very colourful although they tasted great. I had a red pepper instead of green so it blends with the tomato. I also usually use green onion but didn't have any tonight.
Tried another new recipe :) Made Egg Roll Stir-Fry after seeing a friend post it a couple of weeks ago. It looked great and she says it's excellent so figured I'd give it a try. Hubby was not 100% on board but was willing to try it. I used ground pork as he doesn't like ground beef. Followed the recipe pretty much as written except for using a little less ginger and I used tamari sauce instead of soy. It was really good and pretty easy; my kind of cooking :)
I knew today would be a busy day for me and I wouldn't want (or have much time) to cook dinner. I didn't want to go nuts either and succumb to terrible food choices. Hubby picked up a roast chicken from the grocery store on his way home from work and we had it with baked potato and corn on the cob. Tasty, quick and easy, and not too bad health wise :)
I made a couple of new recipes last week; one which was excellent and another which I will not make again. The good one was the One Skillet Paleo Mediterranean Chicken. It was so good we made it again this week but added some gluten-free fresh pasta. It was really good :)
Had a pretty good weekend. It wasn't perfect food-wise but it could have been worse, and I am trying to focus more on the positive things and not focus so much on being 100% good all the time. Nobody is perfect.
A favorite sandwich shop recently reopened so I will admit there has been multiple sandwiches and cheesecakes pieces throughout my weekend. Not great when you are trying to avoid gluten but I did share my sandwiches and cake so only eating half pieces each time. Also had a great dinner out last night for dinner club and Hubby cooked tonight while I prepped for this weeks pre-k activities (busy week with multiple Halloween parties). Tonight we had grilled pork chops, fresh Brussels sprouts and fresh corn from Lester's. It was all great :) Had a great dinner for our second dinner club of the season :) Thanks to Katie and Dave for a great evening and a great meal. There was an assortment of cheeses and bread and crackers with oil and vinegar for dipping. The appetizer was bacon wrapped scallops. Can't go wrong with bacon; they were great. The main was Beef Wellington (first time I ever had it) with a peppercorn gravy, mashed potatoes and asparagus. Dessert was a pumpkin spice creme brulee with homemade cookies. Everything was great :) Great company, lots of drinks and lots of laughs. They are also big Halloween people so the house was filled with decorations. There was a lovely clown at the end of the hall they moved and laughed every-time someone passed by :)
Went to Adelaide Oyster House last night for dinner and it was fantastic as usual :) This is still a favorite place to go for both myself and Hubby. I love the happy atmosphere and the music, even though it's really loud and some people complain about that, we love it. The food there is mostly small plates and they come out in whichever order they are prepared in, so I may get food first and Hubby may have to wait, or vice versa. Not a big deal, especially if you are sharing some things as well. They are always really busy and usually only take reservations for larger groups. They open at 5 pm so we were waiting in a line to get in (yes, we lined up) just before 5 and we were the last group to get a table. I usually get the same couple of items from the menu that I really enjoy and Hubby gets a few of his favorites as well. I had my regular chips and guacamole which is always great. It's made fresh to order and I ask to get it made less spicy. I also get the Kobe Beef Lettuce Wraps which are the best thing on the menu. These a little pieces of heaven so I usually order two :) They have great tasting kobe beef with a wonderful sauce that reminds me of Big Mac sauce. They come in a lettuce wrap instead of flour wrap so no gluten, yay! Myself and Hubby shared the Salt & Pepper Squid, which were so good, we ordered another plate of them :) Hubby had his usual Baked Oysters, a Fish Taco, and a Tuna Taco (somehow didn't get a pic of the tuna taco, too busy eating and enjoying it all). I also had a drink, ok two; my fav there is the El Camino, it's so good. It's a tequila based drink with lime and cilantro and a little hot sauce; yummy. It was a great evening out and we really enjoyed it :) I am trying to wrap my head around the idea that my eating habits do not have to be "all or nothing". I have trouble with this concept; a lot of trouble. I tend to go 100% into a new eating plan and if I slip one tiny bit everything goes out the window and I run to the other extreme; eating everything in sight. I had a pretty good week this week; cooked my meals and ate well. Even though we ate out last night I don't think the options were too bad. Trying to stay positive and make better choices overall.
Still doing well; not perfect, but trying to be positive about the good things that I am doing :) Cooked a nice dinner tonight. Had roasted pork tenderloin with apples and onions along with mashed potatoes and corn. It's a favorite meal of mine but whenever I cook it I always think I should have a green veggie with it. I probably should, but I really like it as is and I don't think it's a bad meal so I'm happy with it :) I have been cooking and eating great meals all this week and I am proud about that. I will admit I have been eating mini chocolate bars (damn Halloween candy) every day this week as well. Not so happy about that but trying not to let it get me unhappy or unmotivated. Taking this one meal and one day at a time :) I am feeling a little better this week so that's a huge positive :)
