Made a big pot of Beef Soup tonight. Made the beef broth over the weekend from local beef bones which is fantastic. Added some beef, onion, carrot, turnip, potato, and green beans. Delicious, and have lots of leftovers for freezing.

Still doing pretty well with my eating this week. I am feeling better but felt pretty bad again this morning; aches and pains and fatigue. Just pretty crappy overall. It's only been a few days so have to stick with it because I know what I eat really affects how I feel :) Tried another new recipe tonight for supper but it wasn't a hit like last night. Doubt we will make it again. I made Garlic Spaghetti Squash with Kale. Myself and Hubby were not overly happy with it; just not to our liking. I was happy that we got the kale and spaghetti squash, locally, from Lester's. First time having their spaghetti squash and it is so much nicer than the grocery store stuff. Still not a huge fan of kale though. I did a diet a few years back where I ate a lot of kale and since then I don't really have the stomach for it. Figured I'd still give it a try in this recipe, but not sure if switching to spinach would have made this dish that much more enjoyable.
Having a great day! Tried a new recipe tonight for dinner and it was delicious. Made One Skillet Paleo Mediterranean Chicken. It was great as is, we only added a little Parmesan cheese at the end; but would have been great without it. Also think it would be wonderful served over pasta. This one is definitely a keeper :) The rest of my day has been good as well. Had a coffee this morning along with local ground beef fried with veggies (zucchini and carrots) and topped with oil and local eggs. Find that to be a pretty filling meal so only had a banana and nut butter for lunch/snack. Still feeling a little better overall health-wise and attitude-wise so will continue to try and stick with gluten-free for now.
So, I have been eating pretty well the last two days (no gluten at all) and I have to admit I am feeling better already. Maybe it's a mind thing, I don't know, but I'm not feeling as horrible today as I have been the last two weeks. I also started seeing a Chiropractor on Friday and have some daily exercises to do so that may be helping with the aches and pains in general. Overall things are looking up; now just to remember that when I eat badly I feel horrible, so stop doing it.
Dinner tonight was cooked again by Hubby; love the weekends :) Not a favorite meal of mine since I'm not overly fond of most fish, but I will admit it was tasty. We had blackened halibut (topped mine with lemon olive oil once cooked), basmati rice with tamari sauce (sometimes eat white rice as it's easier on my stomach, and tamari because it's gluten free), and corn. Should have had a green veggie but still happy with my choices :) For those of you that know me, you know if I haven't been here posting in awhile then it can't be good....you would be right. I am feeling defeated, sad, sick, tired, and depressed. I haven't been eating the best over the last few weeks and my body is really letting me know it's not happy. Really didn't know what to call this post so took the east way out with "no title".
I have made some appointments this week and next with different health care and alternative health practitioners and really hope to start feeling better. I have come to realize that something in my diet (likely gluten) is really making me feel horrible. I need to cut it out and see where I go from there. I have a good meal plan for the week and bought groceries today :) Starting good meals over the weekend instead of waiting to start on Monday as usual, that's how badly I am feeling now. Dinner tonight was cooked by Hubby and was great. We had bison steak done in a butter and mushroom sauce, baked potato with butter and chives, and steamed sprouts and carrots. It was great :) Also had it with gluten-free beer :) Love having a great meal that is cooked by someone else, lol. |
