Snack was a decaf coffee with milk
Lunch was leftover Stuffed Peppers from last night. Had them with avocado and they are still so delicious. Yummy!
Second snack was a little homemade chocolate.
Dinner tonight was a new vegetarian recipe. I happened to see a cooking show the other day and they made Bean Cakes and they looked pretty good and pretty easy. I decided to give them a try and they weren't half bad. Hubby ate them and said they were ok but they tasted like you were eating something healthy :) Too funny. I did find them a little bland so I would up the salt and maybe add a little heat to the lime mayo as well. I made a few changes today as well; I used navy beans because it's what I had and also used dried jalapeno soaked in a little water. We had our bean cakes and dip with a nice salad with olive oil and chocolate balsamic vinegar. It was a nice, light meal :)
Note: the lime mayo was made using homemade mayonnaise that I had leftover in the fridge. I sprinkled it with a little pepper.
