Breakfast was cooked by Hubby. While I waited I had my usual morning coffee. Then we had an omelet made with green peppers, mushrooms, and onions; whole wheat toast with homemade blueberry jam, and homemade hash browns; along with a small orange juice. I am finding that eating real foods I am getting full quicker; I am eating less amounts and less often. I couldn't even finish breakfast this morning. Here's before and after of breakfast.
Today has been a great and very productive day. All meals were wonderful and even had homemade real food dessert that was out of this world. Breakfast was cooked by Hubby. Then we had an omelet made with green peppers, mushrooms, and onions; whole wheat toast with homemade blueberry jam, and homemade hash browns; along with a small orange juice. I am finding that eating real foods I am getting full quicker; I am eating less amounts and less often. I couldn't even finish breakfast this morning. Here's before and after of breakfast. Since breakfast was a little later than usual and more of a brunch, I didn't have lunch, instead just a mid-day snack. I had some rye crackers and some cheese. I was also baking today and made more homemade chocolate and a new chocolate cake/muffin recipe; so I sampled a little of those while I baked as well :) I am trying out chocolate cake recipes to try and find a good cake recipe for my brother's birthday in a couple of weeks. I want a cake that everybody will enjoy, kids included, but is made with real food ingredients. I found a great one right away and will be making this one over and over again. I also tried the homemade chocolate recipe from before but this time I mixed everything by hand instead of in the food processor. I also let the coconut oil melt slowly in hot water until it was all melted, instead of using it half melted and half not. It turned out much better. Same great taste but no white sheen from the coconut oil. For dinner tonight we decided to try a new halibut recipe and we had my parents coming up for dinner as well, therefore we did appetizers and dessert. I really enjoy planning and cooking for company :) Appetizers were shrimp marinated in olive oil, lemon juice and garlic, and then quickly stir-fried in olive oil. For dinner we had Prosciutto Roasted Halibut with Autumn Vegetables, a new recipe from my Barefoot Contessa Back to Basics cookbook. I used halibut in place of the bass because it is what was available here. I also subbed a few other things: I used turnip in place of parsnip (personal preference) and I used dried savory instead of rosemary for the butter sauce (mainly because I forgot to get fresh rosemary and I prefer savory anyway, I used about 1-2 tbsp). Everything I have made from this book so far has been great. For dessert I used my new recipe for chocolate cake; I made a dozen cupcakes to try it out. I cut a cup cake in half, heated it quickly in the microwave (about 10 seconds), placed 2 tbsp of warmed homemade strawberry jam between the pieces, topped with some diced homemade chocolate and toasted coconut. It was delicious. Such a great dessert with no white flour, no white sugar and no added chemicals or preservatives.
