I will admit I am enjoying the weekends more and more. Since I cook throughout the week, Hubby has taken to cooking most meals through the weekend. Yay! Cooked breakfast on the weekends is great; and he is still doing the dishes, even better. What more could I ask for? Life is pretty good when you really enjoy the little things in life; like not having to do the dishes :) Breakfast this morning was whole wheat banana pancakes with blueberries; made by Hubby. We had them with homemade blueberry jam and maple syrup. Delicious. I also had my morning coffee while breakfast cooked, and then an orange juice with my pancakes. This was a really big portion (Hubby plated) I only ate 2 of the 3 pancakes. Lunch today was grilled cheese sandwiches. We made them with homemade whole wheat bread, butter, Gouda and cheddar cheeses. Pretty good. Dinner tonight was a new stuffed pork recipe. We made Spinach Prosciutto and Mozzarella Stuffed Pork Tenderloin. Served it with mashed potatoes (from Costco) with chives, and green peas.....and wine :) Hubby kept saying it was great restaurant quality food. It was really good. Very nice combination of flavors. Another keeper recipe :) We did make double the recipe due to the amount of pork we had. Actually looking forward to weigh day tomorrow, surprisingly. I have lost ever week since we started the 100 day challenge and am thinking I will probably even out and stay near the same weight this week; but Hubby thinks he will be down again this week. Curious to see, especially since we have cut out all the low-fat "diet" foods. Stay tuned :)
