Still going strong on day 54 of our 100 day real food challenge. Breakfast this morning was granola, blueberries, milk, and a morning coffee (decaf). Lunch today was leftover tuna salad so I made another tuna melt on whole wheat bread with a little grated mozzarella. Dinner tonight was a new recipe: Stuffed Peppers. These were really good, both myself and Hubby enjoyed them. I pretty much followed the recipe as written. I used 3 red peppers but I would recommend using the 4 because we have a lot of filling left over. I will likely freeze it and make a small batch of 1 or 2 stuffed peppers another time. I made my own taco seasoning and added it to the ground chicken and onion with some water and cooked it all together. (Made the taco seasoning with a few changes; I omit the cumin, doubled the onion powder, and just added salt & pepper without measuring). Hubby topped his with some salsa and I used a little avocado. They were great. We started off with 1 stuffed pepper each and then shared another one, so now we have the same for lunch tomorrow. They are pretty filling. Would have been great served with a nice side salad but since I didn't plan that I didn't have anything here to make one :(

I had a lot of filling left too, froze it . I topped mine with sour cream and avacado , so yummy

Yeah, I had planned to freeze mine as well but ended up eating some earlier this evening and probably will have the rest for lunch tomorrow :)
