Tried a couple of new recipes today. Breakfast was eggs with plantain bread, although I used a green banana as I couldn't find any plantains, so I guess it was banana bread. The bread was different but nice, although I didn't really like it paired with the eggs. I found the bread pretty sweet and more like a pancake. I think it would be great topped with some fruit and maple syrup :) Really liked the fact it only had 3 ingredients and was super simple to make.
Dinner tonight was spaghetti made with spaghetti squash. I found this meal pretty large as well; very filling.
