So I am almost done this Beyond Calories diet and I have to admit I am losing weight. I am still sticking to real food options with limited processed and no additives or chemicals. I have changed up some of the meals to better suit me. I am not eating foods such as grains but mixing some of the protein and vegetable meals together. It still seems to be working. I just wonder what will happen after the 10 days. I still plan to stay low grain and know I need to eat more fish and vegetables, as this diet has me doing. We shall see.
Meal 1 today was scrambled eggs with tomatoes, along with my morning decaf coffee with milk. All meals today were only protein or only vegetables so I changed it a little.
Meal 2 was leftover Tuscan Chicken from last night's dinner and grilled veggies. Again I mixed protein and veggies :)
Meal 3 was tuna salad and walnuts. A 2 protein meal that I didn't change up :) The tuna salad has tuna, homemade mayo, celery, tomato, onion, and salt & pepper. I admit this picture doesn't look very appetizing though.
Meal 4 was Blackened Salmon and a salad. This meal was again a combination of proteins and vegetables. The salmon was simply done with oil and spices in cast iron. It was ok, but salmon is not a favorite of mine, but I'm trying to eat more healthy fish. The salad was mixed greens, bell pepper, cucumber, tomato, lime olive oil and orange balsamic vinegar.
