Started off the day with a lovely cooked breakfast of scrambled eggs, fried prosciutto, whole wheat toast with butter, and coffee (with maple syrup and whole milk, couldn't get coffee cream this week at the grocery store). That is one aspect that gets annoying. It is hard to find certain items in the grocery store on a regular basis and often we have to go to multiple stores to get everything. I try to stock up when I can, but for things like yogurt and cream it's not as easy. We tried the prosciutto as a breakfast meat since we had it leftover from sandwiches the other day, it was good but really salty. I can't seem to find bacon without added sugar, sigh, but I will keep looking.
Starting off week 2 and things are still going great. Lunch was homemade chicken noodle soup. It was much easier to make because I already had homemade chicken stock and roasted chicken frozen in the freezer :) Snack today was a banana muffin and fruit salad. I made the fruit salad today and put them in the fridge in containers for later. Dinner was soft-shell chicken tacos. I found whole-grain tortillas in the freezer section at Dominion in C.B.S. (and Sobeys in Mt Pearl) so I didn't have to make my own today; and they were really good. I am not totally hung-up on the rule of not eating packaged foods with more than 5 natural ingredients; if all the ingredients fall within the rules than we eat it, even if the number is more than 5. The brand name of the tortillas is Food For Life: Ezekiel 4:9 and they have no added sugar, no bad oils, and are whole grain; works for us. Now Hubby did say the homemade tortillas were better but these were still really good, and it is nice not to have to make everything from scratch every day. We have also found a great salsa with only 5 natural ingredients. The brand name is Herdez and I found it at Sobeys, both in C.B.S. and town.
