Breakfast this morning was granola, banana and milk. No coffee this morning.
Lunch was leftover roasted chicken and roasted veggies from last night's dinner.
Snack today was just a little homemade chocolate, with added coconut.
Dinner tonight was a new recipe that I altered a bit. I found a recipe for Turkey Pot Pie with biscuits but I really wanted to make a hearty chicken stew. I have a stew that I made for years but it used the dreaded canned cream of chicken soup.I say dreaded because look at the ingredient list:
CHICKEN STOCK, WATER, VEGETABLE OIL, MODIFIED FOOD STARCH, WHEAT FLOUR, CREAM (MILK), CONTAINS LESS THAN 2% OF: SALT, DEHYDRATED MECHANICALLY SEPARATED CHICKEN, SOY PROTEIN CONCENTRATE, MONOSODIUM GLUTAMATE, CHICKEN FAT, YEAST EXTRACT, FLAVORING, BETA CAROTENE FOR COLOR, CHICKEN FLAVOR, BUTTER (CREAM [MILK]).
Reading this I can't believe I often ate foods like this without a second thought about the ingredients.
Tonight's dinner used roasted chicken leftover from last night. It had milk and blended veggies for added thickness and I used homemade chicken stock for a great base. This was a great recipe with a few changes. I didn't use the biscuits at all since I was trying to get a stew, but I did have a slice of whole wheat bread (made yesterday) and butter on the side. I used savory instead of sage; personal preference. I cut the salt back to 1 tsp because 1 tbsp seemed like way too much. Finally, I would suggest only using the butter and not the oil. I used both as directed but found the oil just sat on the top when the stew was done so I scooped out as much of it as possible. It isn't needed and doesn't blend in. This is another keeper :)
