Snack was a larabar, some coconut chocolate, and a couple of dried figs.
Breakfast this morning was granola and milk, along with my morning coffee (decaf with maple syrup and cream). Lunch today was just a couple of boiled eggs. Snack was a larabar, some coconut chocolate, and a couple of dried figs. Dinner tonight is coconut mahi mahi, Baked Mushrooms, and sauteed spinach. The fish is done the same as the Coconut Shrimp recipe. Next time though I would also add some salt, pepper, and cayenne pepper to the coconut to add some extra spice/flavor. The mushrooms are the same ones we made last night except I only used 1 tablespoon of butter for half the recipe and didn't use any salt at all, but you may want to just use a sprinkle a salt. The spinach is simply spinach sauteed in avocado oil with garlic, seasoned with salt and pepper, and toasted walnuts added at the end. Another really good meal.
