It was our turn to host dinner club this month. We knew we were going to do Jambalaya as the main but didn't decide on apps and dessert until the day before :) I made a nice iced fruit tea with berries for anyone not wanting beer, wine or cider :) We started with a pre-app of tomatoes and cheeses, included Smoked Cheddar from 5 Brother's. We ended up making Coconut Shrimp with Sriracha dipping sauce (the sauce was store-bought but found one, "A Taste of Thai", with no added questionable ingredients; only sugar). The main was Creole Jambalaya with chicken, shrimp and sausage. The sausage was the local Chorizo from Rocket Bakery. This sausage is really spicy but great in Jambalaya :) Dessert was a recipe I haven't made in years. I made a Chocolate Mousse with berry topping. This mousse is easy and tasty and is made with tofu but you wouldn't know it :) I used an organic tofu with minimal ingredients. I used coconut sugar instead of regular or superfine sugar, Baileys instead of Brandy or water :) and we topped with berry sauce and additional Baileys instead of whipped cream. Overall it was a pretty good meal :)
