I am still struggling and still trying (most of the time some days and not as much some other days). Today has been pretty good. I cooked a Pork Stir-Fry for supper with some brown rice. I am trying to avoid grains and gluten but just want something different. So tired of simply meat and veggies.
Lately I have been in a funk and feel like I am losing way more battles than I am winning. It is definitely a daily struggle to eat better and I understand all the conflicting ideas out there. Eat grains, don't eat grains, only eat whole grains. Eat fat, don't eat fat, only eat healthy fats like olive oil and coconut oil; no wait some people say coconut oil is still unhealthy. Eat lots of protein including meats but only grass-fed, no don't eat too much red meat, no don't eat any meat and be a vegetarian or better yet - a vegan. Some days I just want to sit down with a tub of cheese balls and numerous bars of chocolate and just gorge. I understand the struggle people, it isn't easy.
