Had a great day today. Stayed 100% to real food options. I admit I have been having a lot of trouble eating well lately but I'm still trying. Breakfast this morning was a couple of boiled eggs with a little butter and salt, along with a slice of whole grain bread with butter. I actually found a supermarket brand that is 100% whole grain and has no bad oils or added sugar; and it's good. I had found one before in the freezer section but found it wasn't too great, it always seemed stale. Lunch today was not planned as I had no leftovers. I ended up frying a piece of talapia in butter after dredging it whole wheat flour, salt * pepper. I then made a fish sandwich on the whole grain bread and a little butter. It was pretty good but found that the bread tasted nicer toasted then not :) I also made a new muffin recipe today. They are pretty good but Hubby thinks they are great. They are gluten free and have no refined sugar. They were Cinnamon Maple Crunch Muffins. I found the texture a little odd and not sure why you make a crunch mixture that ends up melting when baked anyways. So snack today was a muffin and then a second to double check if they were still good after cooling :) Dinner tonight was a tossed salad because we had bought new olive oils and vinegars from O'leva Oils and Vins, and I couldn't wait to try them out. The salad was a simple lettuce mix, tomatoes, peppers, carrot, and orange. I used 1/2 tbsp of Blood Orange Olive Oil and half a tbsp of Strawberry Balsamic Vinegar. It was delicious. A place worth going if you love good quality olive oils and fusions of tastes :) We also had Orange Sesame Chicken with brown rice. A good recipe we tried before :)
