Breakfast this morning was a decaf coffee with milk, then a little later I had a boiled egg, a Cinnamon Maple Crunch Muffin (made yesterday), and a small glass of milk. Next I got into a cooking and baking mood. I made Breakfast Muffins. I simply used onions, peppers, and tomato for the muffins. They are good but I find egg baked in the oven a slightly different texture then I'm used to so not 100% happy with them. Also, they really stuck to the muffin tray, even after greasing it with butter; I'm not sure it will ever come clean again :( Next I made Chocolate & Walnut Coconut Cookies. These are great. I will sooooooo be making these again. They are simple to make and full of chocolatey and coconut goodness. It says to store them in the freezer but I find them a little too hard, although they thaw quickly. I have some in the fridge now and will see how they do in there; depending how long they last :) Dinner tonight was another new and great recipe that we will be having again. I made Spicy Shrimp Marinara with a few tweaks, of course. I used the full recipe but only half the shrimp because I was only making 2 servings and myself and Hubby like a lot of sauce :) It was perfect. I also served mine on whole wheat pasta, and I used some grated Parmesan on top instead of the feta. This was a really nice and filling dish :) Afterwards I had one of my cookies (from earlier) for dessert :) Yummy!
