Breakfast this morning was a new recipe from my Practical Paleo cookbook. I tried the Pumpkin Pancakes and they were really yummy. They do have a different texture; they are wetter than normal pancakes, but still a nice taste. I used the banana option in the recipe and topped them with roasted walnuts and warm maple syrup. I had mine with a glass of milk. Hubby is not a fan of pumpkin but he ate them as well and said they were pretty good :)

They weren't too bad of a choice though. Mom brought up her homemade Partridge Berry muffins which are always great. They are made with white flour and white sugar so they don't follow my real food rules, but a homemade option is still better than a store-bought processed option. Also, need to remember moderation when it comes to foods like this :) The second muffin was one I made today, again from the Paleo cookbook. I made Blueberry Lemon Muffins. These are very nice as well. Again, a different texture; wetter but cooked through. I used frozen blueberries but followed everything else. I am planning to have these for most breakfasts this week. I also had a Pumpkin Spice Latte, made with real food ingredients. Dinner tonight was yet another recipe from this cookbook. We tried the Asian Orange Pan-Seared Scallops. They were ok but not a favorite for either of us. We didn't really like the glaze. Now I did use soy sauce instead of the coconut aminos; not sure if that made a huge difference. I also served them with a little leftover orange instead of the zest. I had them with some blackened salmon and steamed veggies with butter.
