No recipe, just used what I had on hand and things I thought would work together. I cooked some Jasmine rice. Stir-fried a bag of frozen mixed veggie (that also had edamame) in a mix of garlic olive oil and sesame oil. Boiled a can of chickpeas (I boiled them to help with my IBS issues when eating beans). I threw everything together and added some tamari sauce (similar to soy sauce). Voila, dinner is served and lots of leftovers :)
I love quick and easy meals; especially when they are satisfying and tasty. Tonight I made a Veggie Fried Rice. It was very simple, quick, tasty, and completely vegan & gluten-free :) Yay!
