This morning had a mish-mash of items for breakfast but it was all fantastic. Made scrambled eggs with green onion and chives. Baked some "bacon" in the oven (our bacon which is simply sliced pork belly marinated overnight in water, salt and maple syrup). Fried up the last of the local cherry tomatoes in basil olive oil and sprinkled with Parmesan. Also used the leftover Ground Chicken Sweet Potato Skillet from the other night. I said it would make a great breakfast meal and I was right :)
Love eating a delicious and filling breakfast. As I typed that sentence I thought, "I could really end it after the first 2 words and it would still be 100% true" :)
