Decided to try something a little different tonight. Made lamb burgers (no bun for me of course). Hubby loves lamb but I'm not a huge fan. They were ok; Hubby thought they were great. May try mixing them with another meat next time. Had them with tomato, mozzarella, sun-dried tomato, spinach, homemade guacamole, and roasted veggies.
For those who have been following me, you know I am recently trying to follow a gluten-free diet for health reasons. We are also still trying to follow real-food guidelines and stick to less processed and little to no refined sugars most of the time. Lately I have been having more difficulty with meal planning. I am finding I'm in a mood and nothing is really appealing to me. Not good because need to cook something to have dinner and leftover lunches.
