Last night I just wasn't in the mood to make what I had planned. It was two new recipes and one had another recipe within it, so now three new recipes. Sigh. I was tired and not really looking forward to the cooking or eating of that particular meal at the time; so I changed it. I baked sweet potatoes and stir-fried some onion, mushroom, and spinach in garlic olive oil. A little salt & pepper for seasoning and voila, dinner is served. Unplanned, but still full of great veggies I already had, and very tasty :)
Sometimes meals do not go as planned, and that is alright. I tend to make a meal plan for the week, well Mon through Thurs :) I find this is very helpful for me, especially for grocery shopping. I only buy what I need for the week and tend to throw less food away because I forgot to use it or eat it. This week did not go exactly as planned but it still worked for us. Unplanned, but still full of great veggies I already had, and very tasty :) Tonight was pretty much the same. Still not wanting to make a bunch of new recipes. So I cooked some corn pasta (gluten-free), stir-fried some veggies (onion, orange pepper, tomatoes, and spinach), and fried up some veggie meatballs. These are pretty good and mainly vegetable and quinoa for ingredients, nothing too weird or questionable. I added some lemon olive oil to my pasta and voila, another great veggie dish :)
