Dinner tonight was stir-fried veggies (onion, bell pepper, zucchini, tomato, spinach), grilled sweet potatoes and grilled mushroom caps. It was all good. Hubby also had a pork-chop for his dinner and another for his lunch tomorrow.
Veggie overload for dinner tonight :) I have a copy of the Canada food guide and have realized even though I think we eat pretty well we don't eat nearly enough fruit and veggies. Trying to change that, so in keeping with how I roll, I probably went a little overboard to start :) Dinner tonight was stir-fried veggies (onion, bell pepper, zucchini, tomato, spinach), grilled sweet potatoes and grilled mushroom caps. It was all good. Hubby also had a pork-chop for his dinner and another for his lunch tomorrow. Also, found these at the grocery store this weekend! So, will likely be having a little dessert later :) The S'mores one was excellent. The Cookies & Cream was a little too sweet for me. Still have two left to try :)
