Breakfast this morning was a fried egg in whole grain bread, "egg in the hole", along with decaf coffee and milk.
Lunch was leftover Bean Cakes and salad from last night's dinner. The bean cakes were still ok but Hubby didn't like them as much leftover; said they were more dry and bland. This recipe definitely needs some tweaks but I think it has potential.
Dinner tonight was Coconut Crusted Mahi Mahi with Spinach Saute with Brown Butter and Garlic (which I added some prosciutto) and baked sweet potato with butter. It was a really nice meal, even after having to cook it in this heat and humidity :)
