Serves 4
Ingredients:
2 cups whole wheat bread crumbs
1 small onion, finely diced (divided)
1 tbsp savory
Butter for greasing pan
1.5 lbs cod (skinless, boneless)
2 tbsp butter
2 tbsp whole wheat flour
1 cup whole milk
1/4 cup cream
Sea salt and pepper, to taste
1/2 tbsp savory
1/2 - 1 cup shredded cheddar cheese (or more if desired)
Directions:
Preheat oven to 350 F.
To make dressing: In a medium bowl add 2 cups bread crumbs, 1/4 of the diced onion, and 1 tbsp savory. Mix together.
Grease an 8 x 11 casserole dish with butter. Layer dressing in bottom of well-greased pan. Layer cod on top of dressing.
In a small saucepan, melt the 2 tbsp butter over medium heat. When melted add in the flour. Stir, it will form a thick paste. Combine milk and cream together. Slowly add the milk and cream, pouring a little at a time and stirring constantly, keep adding milk and cream and stirring until all is blended together. Add the salt and pepper to taste. Add the rest of the diced onion. Stir over medium heat until thickened, maybe 5 minutes. Stirring often so it doesn't get lumpy.
Sprinkle the remaining 1/2 tbsp savory over fish. Pour the milk mixture over the cod in the pan. Top with cheese. Bake for 15-20 minutes, until fish is cooked, cheese is melted and top is golden brown. May want to broil it for last 5 minutes to brown top or add an extra 5 minutes of cooking time if fish is thick. Let sit for a few minutes and then serve.
