Serves 4
Ingredients:
2 tbsp olive oil
8 oz beef strip loin, cubed (May increase meat to 1 lb or more if desired, I am not a big meat eater)
Sea salt & Pepper, to taste
2 onions, chopped
2 celery stalks, chopped
1 L container vegetable broth (about 4 cups)
1 tbsp soy sauce
2 carrots, sliced
2 yellow potatoes, washed and cubed (I leave skins on when possible)
1 cup (frozen) green peas
1 tbsp chia seeds
Directions:
Heat olive oil over med-high heat in a large pot. Add beef cubes. Season with salt and pepper. Cook beef until it starts to brown, then add onions and celery. Saute for a few minutes until everything starts to brown up and you see browning on the bottom of the pot. Then add a little vegetable broth, stir and scrape browned bits off the bottom of the pot.
Turn heat up to high. Add remaining broth, soy sauce, and carrots; bring to a boil. Reduce heat to med-low; cover and simmer for 10 minutes. Next add potatoes, cover and simmer over med-low for another 15 minutes, until veggies are tender. Add green peas, cover and let sit a couple of minutes for peas to get hot. Turn heat to low. Add chia seeds, stir and let sit for about 10-15 minutes. Serve.
Note: The chia seeds are to help thicken the stew without having to add flour. This is the first time trying it and it turned out really well, not too thick.
