Today was a decent day. Breakfast and snack were fine, lunch was out but it was a good choice for what it was; had red pepper soup and half a turkey sandwich.
Tonight I made a new recipe: Eggplant Parmesan. Yes, I was cooking today and had the oven going in this heat and humidity :)
First time ever making or eating eggplant parm and it was really good. I liked it better than Hubby but he did eat it and is taking it for lunch tomorrow; so it can't be too bad. I served it with a nice tossed salad with toasted walnuts.
A few notes regarding the recipe: I would suggest cutting way back on the cheese. I cut it back and I still found it was too much cheese; and I love cheese. Also, be sure to use fresh mozzarella not the overly processed blocks. The fresh is not greasy at all. I also used jarred marinara sauce and it was still delicious. No need to make the sauce if you are short on time.
