Busy getting ready for a new week of Pre-K classes. Also had Veggie Fajitas for supper and made a pot of soup to eat throughout the week as well.
No real recipe for fajitas; just simple and what we like and had on hand. Fried up bell peppers and onions; added black beans and homemade taco seasoning. Grilled some whole wheat flat-breads. Added tomatoes and avocado, and supper was done.
