We made a pot of "Cheddar" Beer Soup from my Minimalist Baker cookbook. We will eat this one evening during the week and have for a lunch as well. I tasted it once it was done and it's very yummy. Very creamy and tasty and completely vegan :) Sorry, the full recipe is not available on-line that I can find. We also made a new risotto recipe: Creamy Mushroom Risotto. This only made 2 servings so will have for a supper one evening. Gave it a try and it's very good as well. I added only half the nutritional yeast and it tasted great. Another vegan and gluten-free recipe. Will likely be making this one again as well :)
A busy but productive Sunday :) (Did the same thing last Sunday) All ready for Pre-K tomorrow and have several meals made to eat this week. Yay! Another vegan and gluten-free recipe. Will likely be making this one again as well :) Finally we made a Spicy Tofu & Veggie Stir-fry. Not an actual recipe as I combined a couple of recipes to make this dish. I made the spicy tofu from the Brussels Sprout Fried Rice recipe which I've made before and enjoyed. After marinating for a couple of hours I simply fried it up until browned. Removed the tofu from the pan and added sesame oil, avocado oil, and and any leftover marinade. Stir-fry some veggies; I used broccoli, cauliflower, and mushrooms. Once veggies are all cooked, add the tofu back in and make sure it's hot. That's it :) This only made 2 servings as well but can easily increase it.
