This made 6 large servings and I ended up with extra sauce so I will freeze that for use in later meals. I also use rice noodles to keep the meal gluten and wheat free. These are the best noodles I have found so far as I find the rice pasta tends to be slimy and gooey. This one isn't at all. Even Hubby enjoys it and doesn't miss his regular pasta when using this one instead. I did find a corn pasta that I enjoyed but seems like it messes with my stomach now as well, so that is off the menu for awhile for sure.
Made a great dinner tonight. Sorry, no actual recipe as I just threw together what we had on hand. I made the sauce using lots of fresh veggies sauteed in garlic olive oil (onion, bell pepper, zucchini, yellow squash, tomatoes, mushrooms, and spinach). I added a large jar of marinara sauce and seasonings (garlic, parsley, oregano, thyme, basil). I tossed the sauce with some cooked rice vermicelli and voila; dinner is served :) This was an excellent meal! Definitely will be making it again.

It's a new year and that tends to mean new year resolutions which often center around health and fitness (but if we are being totally honest; it's usually mostly about weight loss). I gave up the negative dieting mentality and now I just try to be happy and healthy. No dieting and no weighing. No more negative thoughts regarding my weight, body, image, confidence, willpower, or worthiness. No new diet plan to follow strictly, eventually fail and self-sabotage, and end up heavier and sadder than when I began.
Now don't get me wrong; I'm still trying to be healthy. I try to eat what my body needs and what feels good for me; both mentality and physically. I just don't plan to follow a strict, ultimately un-achievable diet-plan to try and lose weight by any means necessary. I have tried some different eating plans/ideas over the past year as I try to eat for my own health and well-being. I suffer from various health problems and they are my focus over the weight. I am finding some answers but I am still searching. I believe that my main health problem is inflammation. My blood work results show high levels of inflammation over the last couple of years and I believe that many of my health problems likely stem from that inflammation. I hope I will eventually find what works for me. I think that no one way of eating will work for everyone, but instead taking a little from this and a little from that I may find what works best for me :) What I have discovered so far is dairy and gluten and/or wheat are not my friends. As much as I love them, they do not return thy love :( Sigh. I felt better overall when eating plant-based (vegan) and gluten-free over the last few months but I still had some issues. I have recently come across the idea of eating for your blood-type. It may be complete baloney but I'm willing to give it a try. If it makes me feel better than it's worth it. I will try to follow it as best as I can but I have to be careful as I find when I follow any set food plan it is very easy to fall back into that old negative diet way of thinking. The idea of bad foods vs good foods and then the feelings of shame and failure when you eat something "bad". The feelings of hunger, food limits and being deprived; and then the binge-eating that typically comes afterwards. I will keep it simple. Try to eat what I need, what is recommended for my blood-type, and see how it makes me feel. Myself and Hubby got some new cookbooks for Christmas :) Looking forward to trying out some new recipes this week! Went grocery shopping today and got lots of fruits and veggies. This pic only shows a part of what we bought. We also got parsnip, carrot, turnip, spinach, lettuce, figs, squash, green onion, and mushrooms. I'm ready to eat :) |
