Yay for Friday! Breakfast today was a green smoothie. I got away from the regular tea and toast this morning. My smoothie was coconut milk, water, frozen fruit, banana, spinach and matcha tea powder. Very nice. So much better with a great blender :) Lunch was leftover roast chicken and veggies from last night. Snack was some homemade dark chocolate, mmmm. I also made a batch of Paleo Granola today to have for breakfasts next week. Dinner tonight was a pot of Chicken Soup from the leftovers of last night's dinner. I put aside some the chicken meat and boiled the carcass to make my own broth. Simply added onion, carrot, celery and spices. Easy and tasty; a great combination. Thinking there may be a snack in my near future, possibly some chips. There will definitely be a drink, possibly wine :)

Another good day. Toast and tea for breakfast. Becoming a regular breakfast even though I want to limit my grains. I need to make another batch of my grain free granola so I have a better option. Lunch was leftover veggie soup from yesterday. I didn't like it as much leftover. No snacks today and after only having soup for lunch I was pretty hungry come dinnertime. I had a handful of almonds while I waited for dinner to cook. Dinner tonight was roasted chicken and roasted vegetables. A favorite here. I stuffed the chicken with lemon and garlic, drizzled Mushroom and Sage olive oil over the top and seasoned with salt, pepper and smoky tea-aki spice. The veggies were onion, carrot and potato, tossed in the same olive oil and seasoned with salt, pepper and savory. Delicious :)
Today did not go fully as planned but still stuck to real food although not much in the way of full meals. Breakfast was toast and tea. Lunch was a green smoothie before I went out to run errands. I was gone much later than expected so didn't get home in time to cook dinner. Instead got a cooked chicken from the grocery store and blended up some squash and carrot soup in the new Vita-mix :) I simply added homemade stock, cubed squash, carrot and an apple. Blended it, seasoned with salt & pepper, and had a wonderful, hot pureed soup.
Another good day. Breakfast was toast and tea. Then I had a mid morning snack. I made my green smoothie with banana, frozen fruit, spinach, frozen coconut milk, matcha tea and water. I used my new blender today and OMG, what a difference. I have often made these types of smoothies in my regular blender but they were always a little lumpy, sometimes gritty and always had a few chunky pieces of fruit. Today it was so smooth, no lumps and no grit :) It was a different, and better, drink. Yay!
Lunch was leftover trout and veggies from last night. I also had the last chocolate muffin from dinner club with strawberry ice cream I made yesterday in my new blender :) Really liking this blender purchase. Dinner tonight was Chicken Chow Mein. I added a carrot and water chestnuts to it and didn't have any green onion to top. Also didn't serve with rice today; just had it as is. Still good. So, I was a little disappointed this morning since I weighed and I am up almost a pound since last week. I know it's not that big of a gain and it's not the end of the world, but I am getting frustrated as I have gained two out of four weeks since back on real food, sigh.
On a happier note, I have done well today and am very excited with my new blender purchase. More on that shortly. Breakfast this morning was my regular toast and tea. Lunch was the leftover mac & cheese from last night (still trying with that). Dinner tonight was pan-fried trout with sauteed veggies. Everything for dinner was cooked simply in oil and spices. For dessert I decided to try and make ice cream in my new blender :) I added milk and cream, frozen strawberries, ice, vanilla and honey. It was excellent. Made it in about a minute and it was delicious and you control what ingredients go in it. Yay! A good day today although we tried to go to Rupert's for lunch (which would have been a cheat meal) but they were closed when we got there. Think someone is trying to tell me something. Breakfast was toast and tea. Snack out running errands was a Larabar. Lunch was a toasted cheese sandwich. Dinner tonight was my second attempt to make a great and creamy, real food, no-bake mac & cheese. This try was better than last time but still not what I'm looking for. I am finding it gritty and wonder if it's from using Gruyere cheese. Not sure; may be from the whole wheat flour I used for the roux. Also not finding it as tasty as I would like. Will keep trying. I have noticed that today's eating, although followed the real food guidelines, was very high in carbs and very low in fruits and vegetables :( We did have a great past week of excellent dinner choices with lots of veggies and no grains for dinner. We recently watched the movie "Fat, Sick, Nearly Dead" and it really has me thinking about my veggie and fruit intake. Not just for weight loss but for health in general and disease fighting properties. I am not sure about the juicing idea although it has worked wonders for him and others. I don't like the idea of throwing so much of the fiber away when juicing. After thinking about it I decided to get a good quality blender and start trying to drink more smoothies and make more vegetable soups and other veggie meal ideas. At least with a blender I can make a smoothie and drink all the fruit and veggie; fiber and all :) Let's see how this works out.
