Had a good but busy Sunday :) Decided to make a few meals today to have ready for the week and some to freeze for later. It meant a lot of chopping (thanks Hubby) and prepping today, but that means less meal/food work this coming week :) Woohoo! Made a large batch of Vegan Jambalaya. Have enough for both of us for a supper and a lunch, plus a couple to freeze. Also made a large slow-cooker pot of Super Thick Vegan 3-Bean Chili. Again, have enough for suppers, lunches, and frozen meals :) This chili is great with corn chips :) Even though we spent all day cooking Chili and Jambalaya. we did a different meal for supper tonight. Hubby cooked pan-fried cod and roasted veggies. Very productive and yummy day!
Had a quick but yummy lunch at Manna today while out running errands :) We both had Roast Turkey Sandwiches but on different breads and some different toppings. I had their pretzel bun which is excellent.
Decided to go to EVOO Wednesday for supper. Was curious about any new vegan additions :) I ordered a new drink (for me) tonight; The Sucker Punch and Hubby had a Port Rexton beer. The drink was good but not great. It was an odd combo of flavors to me and I probably wouldn't order one again but I did drink it so not too bad :) lol It seems the only new vegan addition that night was a vegan chili with a coconut sour cream. You could get it as an app or main. I make a good vegan chili at home so didn't want it as a main. We decided to try it as an app as the coconut sour cream intrigued me. Myself and Hubby split an appetizer size vegan chili and a Calamari to start. EVOO has one of my favorite calamari appetizers on their regular menu! The calamari was delicious as always, as was the vegan chili. The vegan sour cream was a nice touch as well; something I probably wouldn't bother to make at home. For mains: Hubby had the Mediterranean Pizza (light on cheese) and I tried the Fettuccine "Alfredo" from the vegan menu. Hubby really enjoyed his pizza, although not light enough on the cheese for him. I liked my pasta, but again, only liked, not loved. I've tried many vegan dishes at EVOO and this was probably my least favorite. It was good but it was more like something I would make at home. What I mean by that is you could easily tell it was a vegan dish. I have had vegan dishes at EVOO and they have been delicious and hard to tell that they were actually vegan. So tasty and creamy and yummy. This one was a bit lacking and I found the sauce not as creamy as the other creamy sauces have been. Not something I would order again. Overall; calamari, chili, and pizza were great. Pasta and my drink were just okay. Service was great as always!
Had a delicious Vegetable Bean Soup for supper tonight with some whole grain bread. It was great, and even better was that I made it on Sunday so only had to heat it up :) My kind of weeknight meal!
Can't believe it's Monday again; find the days and weekends are simply flying by. Guess that's what happens as you get older.
Tonight's supper was an easy but good one. I like simple meals; especially on a Monday. Made "pasta" with sauce and "meatballs". The pasta was a new chickpea pasta which is surprisingly pretty good. Found it at Costco. I like the fact it's gluten-free and doesn't have a list of questionable ingredients. The only ingredient is chickpea flour. This pasta cooks firmer than regular pasta but tastes fine. Be sure to drain it well as it tends to hold the liquid. The meatballs are veggie quinoa balls which we have used before. I like to fry them up so they get a bit crispy. The sauce was leftover Veggie Sauce I made previously and then froze. Quick and easy and tasty :) Had a good but busy Sunday :) Busy getting ready for a new week of Pre-K classes. Also had Veggie Fajitas for supper and made a pot of soup to eat throughout the week as well. No real recipe for fajitas; just simple and what we like and had on hand. Fried up bell peppers and onions; added black beans and homemade taco seasoning. Grilled some whole wheat flat-breads. Added tomatoes and avocado, and supper was done. Made a pot of Vegetable Bean Soup as well. Have it divided out to have for lunches and perhaps a supper one evening this week.
We tried Fionn MacCool's for the first time last night. Friends invited us out. We haven't eaten there yet because when we first looked at their menu it seemed to be mostly pub-type foods (deep-fried) or heavy-fat foods which Hubby is trying to avoid. We checked out the menu again and now there are some options so we decided to give it a try (I guess the menu is always changing). I started with a cocktail; I had the Raspberry Stone Fruit Cosmo. It was a good drink, not too sweet, but I did get a grapefruit taste from it which is odd. There's no grapefruit in it, I guess it was the mix of ingredients tasted grapefruity to me. Everyone else at the table had Guinness :) For apps, myself and Hubby tried the Baked Buffalo Cauliflower. I was very interesting in trying these when I saw them on the menu. Had them tossed in mild sauce instead of medium and they were pretty good. I expected them to be crispier but would order them again. Even Hubby agreed :) Friends had Mini Yorkies and Calamari for apps and both were enjoyed. Mains were the Shrimp Fettuccine for myself and the Baked Cod for Hubby. Hubby really enjoyed his dish. Sometimes when you order a healthier meal at a chain restaurant it's not always the greatest tasting or not prepared as well; I guess because they are not ordered/served as often. Hubby was happy with this dish and would order it again. It was tasty and the fish wasn't over-cooked. My shrimp pasta was good but not great. Probably not something I would order again. Friends ordered a Guinness Steak & Mushroom Boxty and a Steak & Fries for mains. Both were enjoyed. We went on a Saturday evening and the restaurant was full. The service was great though even though they were really busy. The atmosphere was nice. Busy but not too loud. We were sitting right next to a live music area but nobody was playing. Think it would have been too loud if there was live music. Overall the food was good and the prices were good. Will likely try it again :)
Tried my second free recipe from the Forks Meal Planner and we were not disappointed :) (First one was Cajun Cauliflower Bowl). Tonight we tried the Santa Fe Penne Recipe but I used rice instead of penne as we had pasta last night for supper and for leftovers as lunch again today. This meal was pretty good as well. I'm not sure where they get their serving sizes from as we find the suggested serving sizes seem to be off. This recipe says it makes 4 servings: I only used 1 of the 2 cans of black beans and we still managed to get 6 good-sized servings. Definitely plan to make this again; the only change I would make is to add a little chili powder and/or crushed red pepper. It seems like it needs a little kick of heat.
