I am still following the reintroduction phase of AIEP. I have tried eggs and so far so good. I plan to try them once more this week and then move onto another food. I have started the reintroduction phase for AIEP. I decided to start with eggs. Each food reintroduction can take 2-4 days depending on how you feel/react. The first day went pretty well. There were some stomach issues which I still have off and on so it may have been a coincidence or maybe eggs are a no-go. I decided to continue and try eggs again on day 3 (today), made a great omelet, and so far so good. No issues at all. Fingers crossed eggs are fine :) Things did go off plan this evening as I ended up going to a soft-opening for a family operated restaurant. I ate chicken wings and had a beer. I am curious to see how I will feel tomorrow after eating deep-fried, gluten, and sugar; and having alcohol. We shall see. I will definitely have to postpone any new food reintroductions and may even try eggs one more time as the final day (tomorrow) will be skewed from tonight's eating.
Had a great evening out though with good food, friends and family. Life goes on and I am trying to live it to the fullest while making better choices for myself as much as possible, but not beating myself up when things don't go 100% as planned. Tomorrow is a new day :) Went to Wing'n it tonight, the new location opening soon in Kelligrews! I went to support family (owned and operated) and to support a local business :) (and to be totally honest, to eat great wings, lol). They are presently doing soft openings (invitation only) to help train the new staff, but should be opening to the public very shortly! I had my usual; a pound of Double Ugly wings and even had a beer; a Belgian Moon on tap :) Love it when there are lots of great draft options! Hubby tried the Smokehouse BBQ Chicken Flatbread (no cheese and added tomato). Everything was fantastic. The food was all cooked perfectly! The wings came out excellent, just enough sauce without being soupy. The pizza was great as well with a crispy crust, fresh veggies, and the right amount of smokiness to the BBQ sauce. Service was great as well, especially considering they are new and still learning the ropes. The servers all seem happy and positive, well informed, and on-the-ball; ours was very sweet :) We look forward to eating here again soon :) My sister and the fam were there as well; I took a pic of their table as they had much more going on :) Makes a much better pic to see all the great wings!
I am starting the reintroduction phase today of AIEP! I decided to start with eggs as I love eggs, I don't think they are problematic for me, and they will make breakfast meals easier for me. The way it works is I eat eggs today and note how I feel over the next 48 hours. If all is good I try eggs again and wait another 48 hours. If all is still good eggs are back on my food list :) If not good I keep them eliminated for now (can try at another point as it may change) and move onto another food to try. Breakfast: 2 boiled eggs! I kept it simple, boiled eggs with salt. Snack: Larabar.
Lunch: Leftover Turkey Taco Burrito Bowl with Rice from the freezer :) Supper: Change of plans. I had planned to cook and even went to the grocery store to a get few things I needed, then I left 2 of those needed items at my Mom's, doh. I didn't realize until I was getting ready to cook and didn't want to run out again. Hubby will fend for himself and I just had a can of vegetable soup. Quick and easy, and still follows my guidelines. Not a fantastic supper, but they can't all be right? Sometimes you take the quick and easy :) It's day 25 of AIEP! Woohoo! Breakfast: Leftover Orange Pecan Wild Rice from the other day. Lunch: Leftover Spaghetti Squash Spaghetti from last night. Snack: Half a can of tuna. Supper: We ate at Swiss Chalet tonight, due to a belated bday dinner out. I ordered a quarter chicken dinner with rice pilaf and veggies. I checked out all items on their nutrition allergy info and these choices should be fine for what I am eliminating right now :) It's been 25 days and I've followed my guidelines pretty well; probably 90% and I am feeling much better. My reasons for starting this in the first place were mentioned earlier, check this post :)
Here's what I have found so far: 1.Thyroid has greatly reduced for inflammation. I can't feel it in my throat anymore and it isn't bothering me at night at all. 2. Fatigue is gone. No more mid-day crashes or general all-day tiredness. 3. IBS-D: This has improved but it is far from all better. 4. Hands and feet still swollen and stiff most mornings but no pain on any morning since I started. 5. Overall feeling better :) For those that tell me my eating habits will not greatly change how I feel, this proves to me that it does. It does a lot. Even Hubby says I seem like a different person after just a few days. You don't realize how bad you actually feel and start to think feeling bad is normal but it isn't, it doesn't have to be. I hit a pretty low point and I have to remember how badly I actually felt whenever I think "screw it" and indulge in everything. I know certain foods greatly affect me and how I feel. I need to remember that. I start reintroducing foods tomorrow, so hope to get some answers for foods I can eat again and some I should continue to avoid, at least for another while. I've already decided to start with eggs :) Yay! Eggs tomorrow :) It's day 24 of AIEP and as I mentioned yesterday I'm doing a couple of extra days before I start reintroducing foods.
Breakfast: Oatmeal with apple and nuts. Lunch: Leftover chicken, rice, and asparagus from yesterday. Still delicious! Supper: Spaghetti Squash Spaghetti. I made a simple spaghetti sauce using ground chicken, marinara sauce, salt & pepper. I roasted my squash with olive oil (cut side down, 425 degrees for 35 minutes) and served topped with sauce :) I enjoyed it bit it isn't Hubby's favorite. I've reached day 23 of AIEP! Tomorrow should be the reintroduction phase with reintroducing new foods, but since I wasn't always 100% compliant in following my guidelines I am going to add just a couple more days on before reintroducing :)

Supper: Tuscan Lemon Chicken with Orange Pecan Wild Rice & Roasted Asparagus. The chicken and rice recipes came from my Ina Garten cookbook; recipes I've made before but kind of forgotten about. The chicken is great but it's usually a whole chicken chopped up and grilled on the BBQ. Tonight I used skinless, boneless chicken breast and baked it in the oven (I should have browned them a little better). Still great! The rice dish is one of my favorite ways to have rice and I had completely forgotten about it. The only changes maybe today was I used a wild rice blend and I didn't use the butter or any other substitution at all. It was still delicious! The asparagus recipe is one we do a lot and really enjoy. It's day 22 of AIEP!
Breakfast: Leftover Sweet Potato Skillet from yesterday. Lunch: Creole Jambalaya (meal from the freezer). This one just had the shrimp and chicken, no sausage. Snack: Larabar. Supper: Fish Cakes, kind of :) I make the fish cake stuff but then don't actually fry it into fish cakes, so it's more of a Fish Cake Mess I guess. If you want to get really fancy you could call it Deconstructed Fish Cake, lol :) This is such a simple meal but one of my favorite ways to eat cod. I used a little chicken stock for mashing the potatoes so I didn't have to use butter, as dairy is one of the elimination foods for now. It was still good. It's day 21 of AIEP! Breakfast: Sweet Potato Skillet. I used ground chicken today instead of turkey or pork. I also don't use the cheese as dairy is a no-no for now. This dish is also great with a fried egg or two on top :) I am hoping to soon start eating eggs again, plan to try it as my first reintroduction food. Lunch: Leftover Beef Stew from the weekend. Snack: Larabar. Supper: Chicken burger with homemade fries and Roasted Tomatoes! This was very yummy. The Roasted Tomatoes are from my Ina Garten cookbook but the recipe is available online. I also had a sliver of birthday cake today from my oldest nephews birthday. It was a sliver, actually fell apart upon cutting it, it was that thin.
It's day 20 of AIEP! Almost there :) Breakfast: Banana with almond butter. Lunch: Indian food at the Farmer's Market from Fatima's :) That's what Hubby wanted for his birthday meal so that's what we did. It does follow my guidelines as well so yay! I had a new Mushroom Curry which was fantastic, one of the best dishes I've had there yet. Also had rice, chickpeas, and potatoes :) All was delicious. It was a lot of food so I ate about half for lunch and then the rest for second lunch :) Supper: Leftover Beef Stew from yesterday.
Think I may have popcorn later tonight for a snack. So glad I am almost to the point of reintroducing different foods. I will admit it has not been easy and there have been some snags along the way but I'm glad I did it as I do feel a whole lot better than I did before I started. For anyone that says food will not greatly affect how you feel they are wrong; for me at least. I know when I eat anything and everything I end up feeling horrible and when I start cutting out specific foods I always feel better overall. Looking forward to reintroducing foods to see which I may need to avoid for awhile. I figure gluten and dairy will be among the top avoid foods for awhile at least. We shall soon see :) |
