Breakfast: A huge bowl of fruit and nuts! I used an apple, half a banana, a clementine, a big handful of blueberries, pecans, almond butter, a little orange juice, and coconut. It was really good.
Lunch: Leftover Cajun Cauliflower Bowl from yesterday. I remembered to add some avocado to it today.
Supper: Beef Stew. Didn't really follow the recipe too closely but it gives you an idea. I didn't use the chia seeds to thicken this time. Instead I coated the beef cubes in cornstarch and cooked them first to brown them. Didn't use celery or soy sauce but I did add turnip. Finally, I used homemade beef stock instead of vegetable. It was pretty good.
