Dinner tonight ended up being fried ground pork (fried crispy) with carrots and zucchini, and topped with fried eggs. One of my favorite breakfast meals, but for dinner. Really wasn't in a cooking mood tonight and Hubby is working late. Needed to have something so I wouldn't end up ravenous and eating everything in sight :) This did the trick :)
Still doing great and can't believe how much my legs and knees have improved over such a short time. Last weekend my knees were so bad I could barely climb stairs and they were aching constantly. My calves were so tight they were almost charley-horsing and I needed heating pads for several nights. Now, a week and a half later my legs don't hurt at all, just some slight muscle twitching and my knees haven't bothered me at all over the last several days. Snacking on blackberries and clementines the last few days, really enjoying that :)
