Made a great new recipe tonight, Tomato & Roasted Vegetable Risotto. This is a keeper, plan to make again :) I followed this recipe pretty close, as close as I usually do ;) but I will say I used a lot more broth (probably an extra cup or more) and cooked the risotto about double the time (was needed to get it to soften). Also, I couldn't find passata so I used a can of finely chopped Italian tomatoes. I think tomato juice may work better. I may also try next time with all broth and see how that turns out. The roasted veggies were a real nice addition to this risotto.

Cooked Monday and Tuesday, that's 2 days in a row :) lol. Wonder if I can keep this up ;) Tried a new vegan recipe tonight, Singapore Noodles. It was good, just not great. Hubby enjoyed it more than I did. I ate it for supper tonight but not really looking forward to it for leftovers tomorrow. I found the noodles a little slimy which turns me off. Not sure what I'm doing wrong, the rice noodles always end up too slimy or stuck in a large clump. I followed the recipe, pretty much, just left out turmeric (didn't have) and garam masala (don't like). I added a little pepper and salt. Hubby topped with sriracha.
After a great birthday weekend of restaurants I'm back in the kitchen cooking today ;) lol
Tonight was Shake and Bake chicken (I only made half pieces as that's enough for me) steamed Brussels sprouts, carrots, and mashed potatoes. Yummy! Had a great birthday and enjoyed lots of great meals out over the weekend :) Started on Friday at Bellissimo for pre-bday dinner :) I had the stuffed pasta special (5 cheese) in a white wine cream sauce, so yummy. Hubby had the Veal Risotto special, very good. They make a great risotto, it's the special I usually get. I even had dessert, Zabaglione, which is delicious and wine! For my actual birthday we started at Bernard Stanley for brunch. They do a great brunch! I has $4 mimosas and their Pork Belly Eggs Benny. I get this most times, it's that good. I asked for a side of bacon, birthday bacon lol, but they put it in the eggs benny instead of on the side, so double bacon :) Still good! Finally we ended the day with a lovely dinner with friends and family at Vio's Bistro. I had the Prosciutto Wrapped Stuffed Chicken with Mashed Potato and Veggies. One of my favorite meals there and the mashed potatoes are sinful. Everyone loved their meals and service was outstanding! A great evening out!
There are a handful of meals that I truly love, comfort meals. Tonight was one of those meals. A great meal that I looked forward to eating and thoroughly enjoyed. I made Pork Chops with Apples & Onions but only did 2 chops split into 4 servings as I was having lots of veg and I'm not a huge meat eater. Made mashed potatoes and steamed Brussels sprouts and carrots. All the veggies came from the Farmer's Market or Lester's :)
Made my Chicken Fried Rice tonight for supper! This is one of my favorite meals; easy and tasty. I added mushrooms and celery tonight just to use it up, and it was still great.
A quick change of plans for supper this evening. I had planned to make Sweet Potato Skillet but I had forgotten to take out the ground chicken. Not a big deal. I can take it out and pretty much cook from frozen but when I checked the freezer there was no ground chicken and now it's already 4:30. What to have? No worries, saw a bag of frozen fries and knew we had turkey burgers, problem solved :)
Made a new Soup recipe and this one has potential :) I liked it and it has lots of different possibilities, just feel free to play around with it to better suit your tastes :) Cozy Autumn Wild Rice Soup! More so notes for me when making again :) lol
I didn't use the bay leaf or the bay seasoning as don't like the first and didn't have the second. I just used salt and pepper along with the garlic in the recipe.I left out the kale (really don't like kale, blah), had planned to use spinach but it was already too far gone. I used chicken stock tonight and a wild rice blend. Finally I used unsweetened soy milk, no butter, and almond flour. It was really good although it looked a little cruddy, perhaps due to the soy milk or the almond flour. Tried a new cod recipe tonight and it was pretty good; good enough to make again :) Made Pan-Seared Cod in White Wine Tomato Basil Sauce. Used local tomatoes for the cod and had local potatoes and brussel sprouts for sides :)
Made a great Veggie Pasta tonight! Maybe a little too rich as I combined the ideas of two recipes into one and used what I had available and liked :) For recipe inspiration I looked at Vegan Sun-Dried Tomato Veggie Pasta and Vegan Mediterranean Pasta and ended up with a pretty good pasta dish.
