Made my Chicken Fried Rice tonight for supper! This is one of my favorite meals; easy and tasty. I added mushrooms and celery tonight just to use it up, and it was still great.
A quick change of plans for supper this evening. I had planned to make Sweet Potato Skillet but I had forgotten to take out the ground chicken. Not a big deal. I can take it out and pretty much cook from frozen but when I checked the freezer there was no ground chicken and now it's already 4:30. What to have? No worries, saw a bag of frozen fries and knew we had turkey burgers, problem solved :)
Made a new Soup recipe and this one has potential :) I liked it and it has lots of different possibilities, just feel free to play around with it to better suit your tastes :) Cozy Autumn Wild Rice Soup!

I didn't use the bay leaf or the bay seasoning as don't like the first and didn't have the second. I just used salt and pepper along with the garlic in the recipe.I left out the kale (really don't like kale, blah), had planned to use spinach but it was already too far gone. I used chicken stock tonight and a wild rice blend. Finally I used unsweetened soy milk, no butter, and almond flour. It was really good although it looked a little cruddy, perhaps due to the soy milk or the almond flour.
Tried a new cod recipe tonight and it was pretty good; good enough to make again :) Made Pan-Seared Cod in White Wine Tomato Basil Sauce.
Used local tomatoes for the cod and had local potatoes and brussel sprouts for sides :)
Made a great Veggie Pasta tonight! Maybe a little too rich as I combined the ideas of two recipes into one and used what I had available and liked :) For recipe inspiration I looked at Vegan Sun-Dried Tomato Veggie Pasta and Vegan Mediterranean Pasta and ended up with a pretty good pasta dish.
Made a very yummy Mushroom Soup tonight for supper using a mix of different mushrooms, including fresh mushrooms from the Market. Also had fresh, local green bell pepper and carrot.
I make this recipe close to as it's written. I only use almond flour instead of both almond and chickpea flours, and only use about 1/3 cup total instead of the 1/2 cup in the recipe. I use a wild rice blend and usually cremini or mini bella mushrooms instead of button. Tonight we had store-bought cremini along with a mix of local oyster, chanterelle, and shiitake mushrooms :)
Made a salad and pot of soup for supper this evening, again using lots of local veggies from the Farmer's Market :)
My salad had local lettuce, tomatoes, and cucumber. My soup had local onion, carrot, turnip, celery, and parsley :) Yummy!
Local produce always tastes so much better. I couldn't get over the difference in the local fresh parsley; the grocery store parsley has very little taste compared to fresh local.
Love being able to get fresh veggies at our local Farmer's Market!
Made a new recipe tonight, simple but yummy. I made Mushroom Fettuccine with broccoli. I made a couple of tweaks as usual :) I added a red onion and used Mushroom & Sage flavored olive oil. I think I wouldn't have liked it as much without the oil.
The broccoli, red onion and three kinds of mushroom all came from the Farmer's Market :)
Hi all! I am still here just haven't been in a blogging state of mind I guess.
I am still following my no-more-diets mentality and doing really well now. It can be difficult with all the Facebook posts regarding people on diets, losing weight, working out, getting "healthy". I put healthy in quotes because not everyone has the same idea to what healthy means. Most people equate healthy with weight loss and being skinny. Sorry, not me. I am trying to eat well, get out more, and walk more; but I am doing it all for me; for my own health reasons which do not include weight loss at all. People may find this hard to believe but after years and years of dieting and weighing. Losing weight and putting it and more back on. Feeling sad, depressed, and like a failure. I have had enough of that. I no longer weigh myself. My weight no longer tells me if I've failed or succeeded. I look at how I feel instead and I'm feeling happier. It is taking time and I do have set-backs but I'm still here and still pushing on.
Supper last night was a variety of veggies and some store-bought chicken. Hubby isn't fond of eggplant, which I love, so tried it in Shake & Bake for a change. It was pretty good and Hubby ate it so win win :)
No more talking about good meals vs bad. I ate this meal, I enjoyed it, so it's good :)
Don't care about the calorie count or the portion size. Don't care if it isn't vegan. Don't care that is contains processed food. Don't care it isn't all organic. Don't care it isn't oil free. Don't care it isn't gluten-free.
I've spent too much of my life caring about what I ate and how I looked and what I weighed and what people would think and how they would see me, and not nearly enough time just living and being happy. Living in the moment and not worrying about the weight and food issues. That's where I strive to be now :)
Supper tonight was a Veggie Stir-Fry. No recipe, just threw together what I had on hand.
I used onion, cauliflower, asparagus, green beans, red pepper, mushrooms, and water chestnuts. I stir-fried everything in some vegetable broth. I also made my own sauce; simmered low-salt tamari sauce (could use soy sauce), water, ginger, garlic, and honey together. Served it all on brown rice. Wasn't too bad. I will admit, stir-fry is not a favorite meal of mine but Hubby enjoys them and it's great when trying to eat more veggies :)
