Cooked Breakfast & BBQ for Dinner - Life is good :)

Another hot and beautiful day here in C.B.S.

Breakfast this morning was scrambled eggs, fried potatoes and serrano ham. This ham is similar to prosciutto and it only has minimal real food ingredients. I also had a small glass of milk with breakfast and had a decaf coffee with milk earlier.

Snacks today were some Brazil nuts and some dark chocolate I bought while walking around downtown today, enjoying the beautiful day. The chocolate was organic and the sweetener was cane sugar. Cane sugar is a good healthier, less processed sugar than white sugar but because it is not included in my real food rules I am counting this snack as a cheat meal. That will be my 2 for this week.

There was no lunch today. I just realized that spending the day out and about and having a big cooked breakfast that we didn't eat any lunch. The snack was enough and when we got home we started with dinner. We started with some veggies and hummus as an appetizer. Dinner tonight was BBQ'ed chicken with homemade BBQ Sauce and melted cheese, along with Coleslaw made with homemade mayonnaise. The mayo only takes minutes to make as does the coleslaw, especially when you buy the package of shredded cabbage and carrot :) The BBQ Sauce was already made and in the fridge from a meal last week.
Notes regarding some of the dinner recipes. For the coleslaw I only used 1 bag of shredded coleslaw mix and kept the rest of the ingredients the same. I find this recipe does not make enough sauce for the amount of coleslaw. So, even though I am using about half the cabbage I don't divide the rest of the recipe. For the mayonnaise, I use avocado oil. It seems to work the best, and I use a little less than a cup; about 7 oz.
