Day 1 of our new 80 day real food challenge has been great. I will admit I was pretty hungry most of the day; likely due to all the excessive overeating lately. I did eat a few extra snacks today to help me through, but they were all real food options. When eating real food we don't count calories or have food limits. We eat until satisfied and only real food options. We did this last year for 100 days and we both lost weight and felt so much better.
Breakfast today was a slice of whole grain toast with almond butter along with a chai tea with maple syrup and whole milk. A little later I had a green smoothie with matcha tea, coconut water, fruit, spinach and coconut oil.
Dinner tonight was a couple of new recipes. We did Chicken with Prosciutto and Balsamic. This was delicious and will be made again. I also tried the Veggie Pancakes from the 100 days cookbook. These were really nice as well but you need to have patience to cook them slowly so they don't burn and they cook all the way through. I used white potato, sweet potato and carrot; they were really good. We also had roasted asparagus; done with olive oil, garlic, salt & pepper. The regular way to do asparagus in this house.
