Day 11 - Homemade Pizza

Another good day; food wise and work wise. Started my new kindergarten readiness program today and all went well. Doing the same thing again tomorrow for the next group. Very happy all day :)

Breakfast was my regular granola, banana, and milk along with my morning coffee. I did try something different with my coffee this morning though. Instead of using just whole milk (because I haven't been able to find my organic coffee cream this week, sigh) I tried a combination of coconut milk and whole milk. It was different. Way too sweet with this milk combo and the maple syrup, but really creamy. May play around with this idea a bit.
(I had canned coconut milk leftover from last night's attempt at hot chocolate. Still playing with this idea as well. I love chocolate but am not finding the hot cocoa recipes very good. I think a lot of it is that I'm not used to having hot chocolate made with actual cocoa).

Lunch was leftover pulled pork and mashed potatoes, which was still great. I didn't have a snack today because I was really nervous about starting my new work endeavor and then I was really excited afterwards and didn't even realize I didn't snack until dinnertime when my stomach started growling :) a lot :)
Dinner tonight was our attempt at homemade pizza, right down to the whole wheat pizza crust. It turned out well but the crust was very, very thick. It cooked nicely and wasn't soggy, but I prefer a thin crust pizza. Hubby loves the thick crust so he was pretty happy with it. Also, I didn't realize how much it would rise-up during cooking time, and I prepared it as I would a thin-crust pizza; with a small amount of toppings. I used a little marinara sauce, sliced tomatoes, basil, and mozzarella. It needed more, not more variety but just more of everything in general. There was a lot of dough taste and very little topping taste. Next time we will be loading it up with more toppings.
I did make a double batch of dough, thinking we would make 1 pizza for dinner tonight and another for lunch tomorrow. Again, didn't realize how thick it would be; the pizza was filling enough for both of us for dinner and we still have leftovers for tomorrows lunch. I will freeze the extra dough and may try cutting it half and making 2 thinner crust pizzas next time.
