Breakfast: Made Ground Turkey Sweet Potato Skillet. I have had this many times before and it's always good. Feel free to mix up the ground meat. I usually use chicken but today used pork. I also didn't use cheese or eggs to stay within my guidelines. Still delicious :)
Snack: A big bowl of berries (blackberries, raspberries, and blueberries) with pecans and almond butter. I was craving something sweet after my soup so this is what I had and it was fantastic :) It was so good I already know what I'm having in my oatmeal tomorrow morning ;) lol
Supper: Made Pork Tenderloin with Apples and Onions along with Roasted Veggies. The pork dish has evolved from the Pork Chop with Apples and Onions recipe; both are great. All I do now is put some oil or water or broth in the bottom of a roasting pan. Add my pork tenderloin. Slice 1 small onion and add. Slice 1 peeled apple (cored) and add. Season with salt and pepper. Drizzle pork with olive oil and balsamic vinegar. Cook in preheated oven 400 degrees about 30-40 minutes, until cooked through. Serve pork with apples and onions. My veggies tonight were potato, carrot, turnip, and brussel sprouts. Tossed with a little olive oil, chicken broth, salt and pepper, and savory. Roast in preheated 400 degree oven for about 45 minutes, until veggies are tender.
