Day 15 - Homemade Chocolate!

We are beginning week 3 of our 100 day real food challenge. Today was a little more challenging, mainly because we misjudged time and we were not as prepared as we should have been.

Breakfast was a fried egg and a banana pancake (from the freezer) with maple syrup; and my morning coffee (with cream, I found cream at the grocery store yesterday, so happy). Then myself and Hubby decided to go see the noon movie, spur of the moment. I remembered to pack a snack this trip, so I took 2 Larabars for us to snack on in the theater if needed. It was difficult going to a movie and not getting snacks there. I usually get poutine at the movie theater or nachos and cheese; Hubby often gets the popcorn. It all smelled pretty great but we did not cave :) It helped that we were not overly hungry at that point as well. When the movie was done I was starving. I ate my Larabar and then we had errands to run. To make a long story short, we didn't finish our errands and went home instead because we were both starving. We didn't get home until almost 5, so the chicken fried rice I had taken out of the freezer for our lunch became our dinner instead. This change in plans also means we didn't cook the planned shrimp and veggies for tonight's dinner, therefore we need to take another freezer meal out for tomorrows lunch because now we have no leftovers. Hubby says he doesn't like the fact that if we are out and about we can't simply stop and easily eat in a restaurant. I figure during the 100 day challenge part it's easier to just eat at home. I don't like the idea of going to a restaurant and questioning everything that may be in their food and how's it's prepared. Not eating white flour, white sugar, most oils and nothing deep-fried really limits options out.

I have noticed the last few days, especially during the evenings, I am craving chips and chocolate. I have had popcorn the last couple of nights and that helps with the chip craving because I put a little melted butter and sea salt on it. Still craving chocolate though. I know there are better, more natural varieties of chocolate available, but during the 100 days the only types of sugar allowed is honey or maple syrup. It's hard, if not impossible, to find chocolate sweetened only with these ingredients.

I did find a recipe for making your own chocolate and I tried it tonight. It wasn't perfect but it will do the trick. I only made half the recipe to try it and I was so afraid of over-heating my coconut oil and ruining the whole recipe that I don't think I heated it enough and it didn't seem to mix in properly. The chocolate has a whitish colour to it like the coconut oil didn't blend in, and it was lumpy looking; but it still tastes pretty good if you like dark chocolate. I will be playing with this recipe and attempting it again. I also think it would great topped with coconut and /or nuts before placing it in the fridge to harden.

I will admit I'm feeling better. Not as exhausted as I normally was and stomach issues have decreased :)
