Today has been good!
Breakfast: Oatmeal with almond butter, pecans, blackberries, and blueberries.
Snack: Clementine with my preschoolers :)
Lunch: Leftover Chickpea Stir-fry from yesterday.
Supper: Cajun Cauliflower Bowl, a vegan dish from the Forks Over Knives website. It's from their meal planner, the free edition :) It's pretty good. It states it makes 2 servings but I usually get 3 or even 4. If you want 4 servings I would suggest cooking extra quinoa or rice.
