Breakfast: Sweet Potato Skillet. I used ground chicken today instead of turkey or pork. I also don't use the cheese as dairy is a no-no for now. This dish is also great with a fried egg or two on top :) I am hoping to soon start eating eggs again, plan to try it as my first reintroduction food.
Lunch: Leftover Beef Stew from the weekend.
Snack: Larabar.
Supper: Chicken burger with homemade fries and Roasted Tomatoes! This was very yummy. The Roasted Tomatoes are from my Ina Garten cookbook but the recipe is available online.
