Today was a busy day making a bunch of recipes that I was out of or getting low on. I baked whole wheat bread (this is mainly for Hubby, he eats bread/toast most days for breakfast). I made granola (this is mainly for myself for my breakfast and for snacks). I also made strawberry jam again since I was out and am planning to use it in a birthday cake this weekend. Finally I made homemade chocolate, two batches. I made a regular one for the same birthday cake mentioned earlier, and I made another one with coconut and almonds. It is delicious. Breakfast today was a little later than usually so it was more of a brunch although not a big meal. I mixed plain Greek yogurt with vanilla and the last of my strawberry jam (which is why I needed to make more) and topped it with toasted coconut, toasted oats and roasted almonds. It was really good. I also had an orange juice and my morning coffee. I was feeling a little thirsty this morning, maybe a few too many drinks last night :) Didn't have lunch today. I did sample my chocolate and granola as I made them, and I had a snack of almonds and fresh pineapple, which was excellent. I bought a pineapple this week at Costco because somebody on Facebook had said it was one of the best pineapples they had ever had. I really enjoy fresh pineapple so I figured I'd try it as well. It was really good; sweet and not too stringy, delicious. Dinner tonight was Creole Jambalaya, made by Hubby. Really nice not to have to cook dinner or do the dishes after baking and cleaning all day :) Thanks Hun :)
